Taiwan Style Braised Pork with Rice 台式滷肉飯

Cooking instructions
* Step 1
Boil pork belly with ginger and spring onion for 15 minutes
* Step 2
Immerse pork belly into cold water to cool down
* Step 3
Slice pork belly into finger-like pieces and put them into a pot
* Step 4
Add 3 TABLEspoon light soy sauce, 1 TABLEspoon Dark Soy Sauce, 2 TABLEspoon oyster sauce, 0.5 TABLEspoon Chinese Cooking wine, 0.5 TABLEspoon Black Vinegar, 1 teaspoon white pepper, 3 thumb-sized rock sugar, garlic and deep fried onion/shallot and mix well under medium heat
* Step 5
Add 1 Chinese Spice Pouch and water into the pot until it barely covers the ingredients and mix well
* Step 6
Boil the ingredients, taste and season
* Step 7
Cook them with low heat for 1.5 to 2 hours; stir well in-between
* Step 9
Prepare boiled eggs and fried hard tofu; add them to the pot one hour before completion
