Hong Kong Style Fried Noodle 豉油王炒麵

Ingredient

Noodle

2 bunches

spring onion

Cooking instructions

* Step 1

Soak noodles in hot water and spread them

* Step 2

Dry the noodles in colander for use

* Step 3

Cut white portion of spring onion into fine julienne and green portion into segments

* Step 4

Mix 1.5 TABLEspoon light soy sauce, 3 TABLEspoon dark soy sauce and 1.5 teaspoon sugar for use

* Step 5

Pan-fry eggs and slice it to segments for use

* Step 6

Saute shallot and white portion of spring onion using medium heat and put them aside for use

* Step 7

Saute noodles gently by chopsticks using medium heat until dry

* Step 8

Add sauce mixture to noodles one spoon at a time and mix well using low heat

* Step 9

Add green portion of spring onion to noodles and mix well for 30 seconds using high heat

* Step 10

Put sliced egg on top of the noodles for serving
