RANGAALUR ROSHOMOTI is a sweet from Bengal prepared during Makar Sankranti. Rangaalu means sweet potato in Bengali.It is very similar to the Gulab Jamun.Soft dumplings are made with boiled sweet potatoes, refined flour and rice flour and stuffed with a filling of khoya, shredded coconut and jaggery.They are then deep fried and soaked in jaggery syrup or sugar syrup.

Cooking instructions
* Step 1
Put the grated coconut,khoya and jaggery in a non-stick kadai and keep stirring over low flame until well combined.Keep stirring for 5 more minutes till the mi ture is dry.Remove the dry mixture onto a plate and set aside.
* Step 2
For the jaggery syrup, put water in a pan and bring to a boil. Now add the jaggery.Let the jaggery melt completely in the water.Let the mixture boil for 5 more minutes and then turn off the flame. Keep aside.
* Step 3
To make the dumplings, steam the sweet potatoes and remove the skin. Pat dry the sweet potatoes. Now transfer the sweet potatoes in a bowl and mash it. Now add rice flour, flour, lukewarm milk to the mashed sweet potato and knead it into a soft dough.
* Step 4
Divide the dough into 10 equal sized round balls.Now take 1 ball and grease it with little oil. Flatten it with your fingers to form a small cavity. Now fill the cavity with the prepared filling. Bring the edges together and seal it.
* Step 5
Now heat oil in a pan. Deep fry the prepared sweet potato dumplings till golden brown. Once done, transfer the fried sweet potato dumplings directly to the bowl of warm jaggery syrup. Keep the dumplings in the syrup for 5 minutes,then remove onto a plate.Garnish with chopped pistachios.

Rangaalur Roshomoti is ready to be served.
