Malai Ghevar

It is a traditional Indian sweet which is mostly popular in Rajasthan and in Northern India. A deep fried discs which are soaked in sugar syrup and is garnished with rabdi and nuts. #rakhi

Ingredient

ghee

1/2 cup

milk

1/2 cup

sugar syrup

Cooking instructions

* Step 1

In a blender jar add 4 tbsp ghee and 1/2 cup chilled water and pulse or blend for few second. Now add 1/2 cup milk, blend it for few second.

* Step 2

Add all-purpose flour little by little in the jar. Add 2 cup cold water and blend it again to get a flowing consistency.

Add lemon juice and blend it. Take it out in a bowl.

Heat oil and ghee in a medium size deep pan. Keep the flame on medium heat. Pour the batter little by little in a constant flow into the centre of the pan.

* Step 5

Wait for a minute and pour another ladle ful in the centre of the pan. Wait for few second. Remove some batter from the centre with a knife.

* Step 6

Pour one more ladle ful of batter. Once it is golden in colour, insert the knife in the centre of the Ghevar. Take it out from the pan. Repeat the same process for rest of the Ghevar.

* Step 7

Now place the Ghevar on a plate and drizzle evenly with sugar syrup. Garnish with rabdi, chopped nuts and few saffron strand then serve.
