Spicy Carrot, Lentil, Lime & Coriander Soup

Spicy Carrot, Lentil, Lime & Coriander Soup

Another nourishing and tasty winter’s soup. Note that neither salt nor pepper are added but add seasoning at the end if you really must.

Cooking instructions

* Step 1

Bring oil to medium-high heat in a stockpot or large saucepan. Add the curry powder and cumin and fry for 1 minute, stirring continuously, creating a bit of a paste.

* Step 2

Stir in the onion and garlic and fry for 3 minutes, stirring occasionally but only to avoid sticking.

* Step 3

Stir in the carrots and cook for a further 4 minutes, stirring occasionally.

* Step 4

Stir in the lentils and stock, a little at a time. Bring to the boil, the reduce to a simmer and cook, stirring occasionally, for 20 minutes or until the lentils are cooked.

* Step 5

Whizz to desired consistency in a blender and stir in the lime juice and coriander. Serve piping hot with your chosen carbs.
