Quick and easy bruschetta

Over the festive holidays, I was reminded how simple flavours can be so rewarding and satisfying. On a family trip, by pure unplanned chance, I found myself at a small family-run Italian restaurant for dinner one evening. When you have been travelling all day and looking for somewhere where the adults can enjoy great food but also please a toddler, Italian food is always a winner. Certain our daughter would choose a freshly made pizza we were stumped when she dismissed everything on the menu and said no to it all! We decided to risk it and just order a few bits - there was bound to be one thing she could try and enjoy. She sampled everything, Bruschetta being our starter. Watching the pure joy, toddlers exhibit when they try and love something new has inspired a few of my new year's resolutions /goals for 2023...cooking with more simple flavours with great ingredients, and being adventurous in my everyday cooking

Cooking instructions

* Step 1

Slice your ciabatta rolls open. Toast the bread until golden and crunchy under a hot grill. NB - I used ciabatta bread this time but of course, traditionally bruschetta is made with french baguettes, choose whatever bread is your favourite just as long as it makes great toasted slices

* Step 2

Whilst the bread is toasting, roughly chop up your tomatoes and put them in a bowl. chop your basil leave small and add to tomatoes, how much you use is really to personal preference, I used about 5 leaves for mine as fresh basil is very aromatic.

* Step 3

Drizzle over olive oil and season the tomatoes to taste with sea salt and black pepper. You can keep tasting as you go to see if you're happy with the ratios and if you would like more basil.

* Step 4

Peel your garlic cloves. Remove the toast from the grill. and rub the raw garlic clove all over the bread. Don't go overboard as the garlic will overpower the flavours, just a light rubbing if fine. (depends on how much you like garlic i suppose)

* Step 5

Top the bread with your tomatoes and basil mixture and serve. easy and delicious
