Cajun potatoes

In the recent times Finger foods have gained more sophistication and elegance. They are bite-sized snacks are perfect finger foods festive seasons like Diwali. Finger foods are becoming more popular and it is consumed as appetizer or mid snack. One such lip smacking finger food and easy to prepare is Cajun Potatoes.

Cooking instructions

* Step 1

Wash the potatoes thoroughly as we will be using the skins for this recipe.

With the help of fork prick the potatoes. Boil water and add a tablespoon of salt, add the pricked baby potatoes and allow it to cook upto 90%. Ones the potatoes are boiled, drain the water and set aside to cool down.

Take each potatoes and press gently with your palms, to partially flatten it till the skin just splits

Gently dust the potatoes with cornflour powder and pepper powder.

* Step 5

Heat a pan with oil and shallow fry the potatoes till golden and crisp. Deep frying can also be done. Soak the excess oil in a paper towel. This is how it looks

Now take a mixing bowl. Add all the remaining ingredients; mayonnaise, ketchup, chilli sauce, paprika powder, garlic powder, thyme, oregano, finally chopped celery, half the quantity of onions and coriander leaves and salt as per taste. Give it a good mix.

Arrange the potatoes in the serving dish and spoon the mayo mixture on each potatoes, just before serving, else the potatoes will turn soggy. Sprinkle with left over onions, coriander leaves and bell pepper. Sprinkle some pomegranate powder over.
