California Farm Air Fryer Roasted Rabbit

My little air fryer has quartz heating elements and a roasting spit and makes the best roasts because it cooks so evenly and precise, so I used it to spitroast this 1 1/2 pound young rabbit half. I cut a 3 pound young rabbit in two halves, front and back, and roasted half basted with red cooking wine, rosemary and thyme, and a steaming drip pan with the wine mix underneath. Ingredient

Food ration :

2 people, 2 dinners

Cooking time :

1 1/2 hours or less

Cooking instructions

* Step 1

Boil 2 cups of red wine with rosemary and thyme, pour a cup in the drip pan of your air fryer. Spitroast fresh rabbit half an hour at 400F degrees to build a crust. Top off the drip pan with more wine mix.

* Step 2

After roasting half an hour, baste rabbit several times with wine mix from drip pan, spitroast another half hour to an hour till meat feels tender, pulls off the bone between your fingers. Rest fifteen minutes. Serve with sour dough bread, fresh cherry tomatoes and fresh green onion dices. Save carcass and drippings to make gravy.
