Frozen Carrots
I find that the easiest way to preserve them is to freeze carrots in various amounts so that I can add them to gajrela or baked goods as I need them. I always have shredded carrots on hand if I want to make a carrot cake for dessert. Shredding can be done manually, but if you have access to a food processor that will make the job go much more quickly.

Cooking instructions
* Step 1
Thoroughly wash carrots; and peel them. Shred carrots manually or with a food processor.
* Step 2
Portion shredded carrots into muffin tins or suitable freezer containers.
* Step 3
Freeze carrots for 6 hours or overnight.
