Pineapple Chutney
Enjoying moong dal dosa with pineapple chutney on this beautiful monsoon morning. I simply made this dosa with overnight soaked moong dal and spices. But the sweet & sour pineapple chutney is what gives "boom taste" to this dish. I really liked it more than our regular ketchup or coriander/mint/coconut chutney when paired with moong dosa.
Cooking instructions
* Step 1
Heat oil and add ginger to pan. Saute for few secs.
* Step 2
Now add tomato, saute for few secs then add pineapple and mix well.
* Step 3
Next add red chilli flakes, salt, sugar, mox well and cook for 2-3 minutes.
* Step 4
Add 1/4 cup water, mix and cover and cook on low flame for 6-8 mins.
* Step 5
At this point, mash the mixture with help of potato masher.
* Step 6
Stir for a min, cover and cook for another 4-5 mins.
* Step 7
Add 1/4 cup water and stir well.
Mix 1 tbsp cornflour in 2 tbsp water and make it lump free.
* Step 8
Add this to the pan and mix well & cook untill it thickens. Let it cool before serving.
