Peri peri chicken
Cooking instructions
* Step 1
Prepare the sauce by grinding all the mentioned ingredients to a smooth paste. Marinate the chicken will all the ingredients mentioned under grilled chicken and set aside for 1 hour. After an hour grill the chicken in the oven at 200°C for 10 minutes.
* Step 2
Preparing the gravy. Cut the grilled chicken into small bite sized pieces and set aside. Heat butter in a pan, add the onions, green chillies and saute for a few minutes. Add the chopped tomatoes, ginger garlic paste, salt and fry for a few minutes. Next add the tomato puree, peri peri sauce and the capsicum. Cook for a few minutes. Add in the chicken pieces and cook. Add the cornflour dissolved in water and thicken the gravy. Lastly add the milk and let it come to a boil. Set aside.
* Step 3
Preparing the rice. Par boil the rice till 80 % done. Strain and set aside. In a vessel heat butter. Add the onions and saute for a few minutes. Add the ginger garlic paste, and the red and green bells. Cook for a few minutes. Add the peri peri sauce, tomato sauce and salt. Mix well. Add the boiled rice and mix everything well. Cover and simmer till done. Enjoy!
