Dates Gingerbread Pancakes

#CFF Pancakes are a favorite breakfast or snacks option for kids and adults alike. What if they are completely sugar and jaggery free, sweetened with dates. Isn't that so healthy, yummy 😋 and guiltfree.

Ingredient

Food ration :

6 pancakes

Cooking time :

30 min
1/2 cup

Maida

1/2 tsp

Cinnamon

1/2 tsp

Dry ginger

1/4 tsp

Nutmeg

Pinch

salt

1/4 cup

Oil

Cooking instructions

* Step 1

Remove seeds and soak the dates in hot milk for 15 min. I used Kimia dates here, but mejdool also works great.

Sieve dry ingredients together which are maida, atta, baking powder, salt, cinnamon, nutmeg and ginger powder.

After 15 min grind the soaked dates and milk to a fine mixture. Also add oil to the mixture.

Add the prepared dates milk and oil mixture in the dry ingredients

If needed add more milk to adjust consistency like dosa batter.

Whisk together everything without lumps.

Heat a pan on low to medium flame and smear some oil on it. Add a ladle full of batter in it.

Do not spread batter with laddie. Just shake the pan to spread it little evenly.

Cover the pan and cook for 2 min on low flame till bubbles appear on top.

After 2 mins apply some oil on the pancake flip it carefully.

Cook from other side also for 2 min. Pancake is ready 👍

Serve pancake topped with chocolate sauce, some more dates or any other seasonal fruits.
