Hoosier "Ham Salad"
This bologna spread is a much more popular in Indiana than real ham salad, so I assume that's how it got its name. My dad made it frequently when I was growing up, and I still prefer it. Some people add chopped hard boiled eggs to the mix, but I like it better without.
Cooking instructions
* Step 1
Mix all ingredients together. Refrigerate in a covered container. Use as a sandwich spread, on crackers, or with pita chips.
* Step 2
NOTE: I buy thick sliced Boer's Head brand bologna from the deli and grate it in my food processor because I don't have a meat grinder. Works out fine. Plain yellow mustard can be substituted for the spicy brown if you prefer it.
