Cooking instructions

* Step 1

Cut off the ends of the rhubarb stems. Peel them with a knife by removing the threads along the entire length of the stems and clean the rhubarb under water.

Cut the stems into small squares and put them in a bowl.

Add sugar to the rhubarb, mix everything well and let the rhubarb drain for a few moments (24 hours ideally).

Prepare your homemade shortcrust pastry (follow my video recipe by the link https://youtu.be/vZy_yMnwvrk) or take a store-bought shortcrust pastry, spread it on a surface of floured work using a rolling pin (about 2-3 mm thick).

Preheat the oven to 180 Β° C.

Take a mold (I use a 24cm diameter springform pan) and cover the bottom with baking paper. Butter and sprinkle it with flour. Spread the shortcrust pastry in the mold and prick the bottom with a fork.

Sprinkle the pie shell with almond powder.

Place the well-drained rhubarb on the dough.

Sprinkle the rhubarb with sugar (optional).

Bake at 180 Β° C for about 35 minutes.

Let the pie cool completely to room temperature befor serving it.
