coconut

Cooking instructions

* Step 1

preheat the oven to gas mark 5

* Step 2

with a wooden spoon beat the butter and sugar until soft

* Step 3

beat in the eggs one at a time

* Step 4

add the lemon essence

* Step 5

with a metal spoon stir in the 2oz. coconut and flour

* Step 6

put paper cases in the bun tin and spoon the mixture into them

* Step 7

cook for approx 20minutes

* Step 8

leave until cold

* Step 9

mix the icing sugar with 1/4tsp essence and carefully add water until you have a thick spreading consistancy

* Step 10

spread over the top of each cake

* Step 11

sprinkle the coconut on top right away while the icing is wet

* Step 12

and put a cherry in the middle of each

* Step 13

leave until the icing has set then store them in an air tight tin.
