Mushroom stuffed chicken breast wrapped in bacon
‘Tis mushroom season and hearty dishes using them is high on my priority list! This comfort food classic of chicken wrapped in salty, smoked bacon is taken up a notch by its filling of creamy mushrooms, garlic and thyme

Cooking instructions
* Step 1
Preheat the oven to 190c. Finely chop the mushroom and shallot and add to a frying pan with a drizzle of oil over a medium high heat
* Step 2
When the mushroom starts to turn a little golden add the chopped garlic and thyme and stir for 1-2 mins. Then add 100 ml of cream and allow to thicken, stirring occasionally
* Step 3
Carefully slice into the chicken breast to create a pocket or flap, and place each breast on top of 3 rashers of bacon, flap side up. Add 1-2 tsp of the mushroom mixture and wrap with the bacon to seal
* Step 4
Place on a baking sheet and roast for 20 minutes, remove from the oven and place in a clean frying pan with a drizzle of oil to crisp up the bacon.
* Step 5
Add the remaining cream to the remaining mushroom mixture and stir to combine and heat through. Serve the chicken on the mushroom sauce with green vegetables
