Chicken Milanese

This dish is a quick and easy way to make chicken breast a bit more interesting. You can add herbs or spices to breadcrumbs if you like!

Cooking instructions

* Step 1

First tenderise the chicken, bashing it so it is an even thickness all over

* Step 2

Then put the flour on one plate, the egg on another and breadcrumbs on a third. Season the flour and the breadcrumbs with salt and pepper (add any additional herbs or spices here) and beat the egg

* Step 3

Place the chicken in the flour, followed by the egg and finally in the breadcrumbs. Coating both sides each time

* Step 4

Place a medium frying pan over a medium heat and fill with vegetable oil about 2cm deep. When the oil is hot add the chicken and cook for 8-10 minutes, turning half way until the chicken is golden and cooked through

* Step 5

Serve with salad and some fresh Parmesan and lemon wedges if you like
