Festive balls
Christmas time in the UK is a time for sit-down meals but there’s often the need for some festive finger food for more informal gatherings. This recipe leverages festive flavours in a convenient falafel-like package. No need to break conversation in your annual catchup to munch one of these down. #vegan #glutenfree #OneRecipeOneTree
Cooking instructions
* Step 1
Trim and peel the parsnips and sprouts and add to a pan of boiling water until the parsnips are soft.
* Step 2
Heat some oil in a pan and add the chopped leek. Drain the parsnips and sprouts and add those too.
* Step 3
Season with salt and pepper. I added some sage too. Then, with a potato masher, mash the ingredients together. I ground up some cashews to help bind the mix.
* Step 4
Using your hands create balls from the mixture. I cut up small cubes of vegan mozzarella and put those in the middle.
* Step 5
Add to preheated (and oiled) baking tray and cook at 200°C for 30 mins, carefully turning once.
