Roast potatoes
I asked my dad last Christmas how he gets such consistent roast potatoes and this was his answer.
Cooking instructions
* Step 1
Peel and wash the potatoes. Chop in to rough cubes about 3-4cm. Add to a pan of water and bring to the boil. Preheat the oven to 200°C
* Step 2
Boil for 5 minutes then drain the potatoes.
* Step 3
Return the potatoes to the pan, replace the lid and shake to soften the edges of the potatoes.
* Step 4
Heat a tablespoon or 2 of oil in a large pan or wok and cover the potatoes well. You could season at this stage.
* Step 5
Transfer potatoes to an oven dish and put them in the oven. I added a bit of rosemary at this stage.
* Step 6
The potatoes are ready once they start to turn a golden brown colour (about 30 mins). Good to eat immediately although they might be a bit hot in the middle so take care!
