(In a hurry) coconut curry
This is a super #quick #vegan recipe and another family favourite. It’s not going to win any authentic curry awards but it’s delicious and easy.

Cooking instructions
* Step 2
Chop the garlic, ginger, chilli and veggies and add to a hot wok and stir fry for a few minutes.
* Step 3
Cut the tofu in to cubes.
* Step 4
Add the tofu and spices to the wok. Add some soy sauce now too.
* Step 5
Grab a can of your favourite coconut milk.
* Step 6
Pour the coconut milk in to the wok and cook for 20-30 mins. It will darken in colour. Once you see some oil separation then you know you’re in business. Add the lemon juice at this point.
* Step 7
Serve with rice or noodles. Cooks choice.
