Pea Soup with pepperoni

Pea Soup with pepperoni

Nothing can be more satisfying than a nice bowl of soup on a cold winter day. Served with home baked bread roll.

Ingredient

Cooking time :

30 minutes
450 g (1 lb)

frozen peas

4 tbs

oil

1 tbs

flour

1 tsp

paprika

1 l (2 pint)

chicken stock

Cooking instructions

* Step 1

In a large saucepan saute carrots, parsnips and garlic in 1 tbs of oil (for about 7 minutes). Add peas and stock and simmer until vegetables are almost cooked (20 minutes).

In the meantime fry 1 tbs of flour in oil until golden brown. Take it off heat and sprinkle with paprika. Add a little soup or water stir quickly and pour it into the soup. Let it simmer for a further 5 minutes.

Enhance your soup with a handful of dry broken vermicelli (which is very fine, long strands of pasta).

Serve with fried pepperoni slices and enjoy your soup with a slice of home baked bread.
