Berry clafoutis
A very simple French pudding, great for celebrating summer berries or cherries too.
Cooking instructions
* Step 1
Preheat the oven to 200C. I'm using a fan oven.
* Step 2
Melt the butter in a small saucepan over a low heat or in the microwave.
* Step 3
Combine the flour, sugar and salt in a large bowl.
* Step 4
Crack in the eggs one at a time, whisking each in as you go.
* Step 5
Whisk in the milk, vanilla extract and melted butter. It will be a loose batter.
* Step 6
Grease a baking tin with butter, then add your berries to the base.
* Step 7
Pour over the batter and pop in the oven for 20 to 25 mins until golden and risen, reducing the temp to 180C after 10 mins.
* Step 8
To check it's done insert a knife and it should come out clean. The clafoutis will sink a bit but don't worry. Serve warm.
* Step 9
Ps. I made another with just blueberries. They are not as full of water as raspberries which I preferred but my friends liked the raspberry version more. See which you like.
