5 minute pesto

There’s not much to say about this other than it’s super easy and really delicious. I served it with seared steak and a rocket salad but it would also be a rapid pasta sauce. I actually used the leftovers to make pesto pasta.

Cooking instructions

* Step 1

Lightly toast the pine nuts over a medium low heat on a dry pan until golden. It’ll only take a minute or two - be careful not to burn them.

* Step 2

Put all the remaining ingredients including the toasted pine nuts in a container suitable for blitzing with a stick blender, or use a small worktop blender

* Step 3

Blitz until you’re left with a slightly rough paste and serve. I served mine with seared steak.
