I never knew that homemade marmalade was so easy! I made this to give for Xmas presents to my family. Cooking instructions

* Step 1

Peel the oranges. I did this using a small, serrated knife and although you have to peel SO MANY, it is fun to try to challenge yourself to try to get the peel off in one long piece. Try not to get too much pith attached to the peel. Peel the lemon too.

* Step 2

Lay the orange peel out flat and chop them into thin strips. It helps to use a large, sharp knife for this. Chop the lemon peel with the oranges.

Chop the peeled oranges in half and squeeze them into the muslin cloth over the pan you intend to use (to catch the juice). When all of the orange is squeezed put the remaining pith into the cloth. Do this for all of the orange, don't throw the pith away but catch it in the cloth. When they are all juiced tie up the cloth, either with string or by taking opposite corners to the other and knotting them together. Squeeze the juice out of the muslin cloth. Leave in the pan with the juice.

Add the chopped peel to the pan. Top up with the water. Bring the pan to the boil, then simmer for 2 hours.

After 2 hours squeeze out the muslin bag. Try to get as much juice out of it as possible, as the pectin in this makes the marmalade set.

Add the sugar to the pan. Dissolve on a low heat (dissolving on a high heat risks the sugar burning) Once it is dissolved turn the heat up and let it simmer for about an hour. Be careful here not to overcrowd the pan, if it is too small the amount of sugar in the marmalade could over-boil and get all over the counter (a mess you don't want to clean up). If your pan is too small I recommend splitting it between 2 pans.

Place a plate in the freezer. Whilst the sugar is dissolving sterilise your jars. I do this by washing them in soapy water and placing them in the oven at a low heat for 15 minutes.

* Step 8

To tell if the marmalade has reached setting point place a small amount of it on a plate. If it has a skin on it then it is ready.

* Step 9

Turn the heat off, and leave the marmalade to cool for 15 minutes. Pour the marmalade into the jars, and put the lid on when it is still hot. Leave to set and enjoy!
