Harissa chicken with olives and tomatoes
One of my staple #weeknightmeals which I have made for years. Its very quick and easy with minimal prep and washing up.
Ingredient
Food ration :
3-4 servings
Cooking time :
25 mins
Cooking instructions
* Step 1
Lay chicken flat in a roasting dish. Top with the harissa, oregano, oil and seasoning.
* Step 2
Mix together with your hands, ensuring all parts of the chicken are coated.
* Step 3
Cover tray with foil and place in a preheated oven at 180C for 15 mins
* Step 4
Then add the tomatoes and olives. Mix to coat with the sauce and return uncovered to the oven for a further 10 mins.
* Step 5
Then serve with couscous and steamed greens. (I had it with a lemon and chickpea couscous and broccoli.)
