Bavarian Strawberry Cheesecake

Cooking instructions
* Step 1
Process the biscuits in a food processor or blender until the turn to crumbs (or put in a strong plastic bag and bash with a rolling pin). Melt the butter and stir in the crumbs. Spoon in to the base of your tin and press down well. Chill if possible.
* Step 2
Slice half the strawberries and line across the biscuit base.
* Step 3
Process the cottage cheese, quark, egg yolks, sugar and the remaining half of the strawberries in a good process or blender until smooth. Pour in to a large mixing bowl.
* Step 4
In a separate small heatproof bowl, put 3 tbsp cold water and sprinkle over the gelatin. Place over a pan of gently simmering water and leave until dissolved and clear, then whisk in to the strawberry mixture.
* Step 5
When set, using a hot knife (dipped in boiling water and dried), loosen the cheesecake by running the knife blade around the inside of the tin. Release the spring clip and carefully lift off.
* Step 6
Just before serving, whip the cream until stiff and spoon in to a piping bag. Decorate with the cream and extra strawberries.
