Preheat oven to 200C fan. Line a baking tray with baking paper and set aside.
* Step 2
Dip chicken pieces into mayonnaise and then breadcrumbs to coat. Place on tray and drizzle with oil (preferably olive, rice bran or macadamia) over each piece carefully.
