Mexican Quinoa

Cooking instructions

* Step 1

In a large pot, over a medium heat, add the oil, garlic, onion, pepper, jalapeno, salt, pepper, cayenne pepper, chilli powder and cumin.

* Step 2

Saute until onion is translucent 5-6 minutes

* Step 3

Add tomatoes, crushed tomatoes, vegetable broth, water, quinoa, kidney beans and black beans. Bring to a boil

* Step 4

Cover and reduce to a simmer for 25-30 minutes

* Step 5

Add the corn, lime juice, oregano before covering and simmering for a further 5 minutes.
