Poor man's Soup

Got the idea for the Recipe from the Food and Drink App Yummly. It suggested using a large Turnip,but am not keen on Turnips - could use a section of Swede of a similar size.

Cooking instructions

* Step 1

Fry chopped onions for 7 minutes and then add the 2 cloves of Garlic, Bay leaves and maybe the finely chopped Parsley, salt and pepper and fry for a further 3 minutes.

* Step 2

Add the Vegetable Stock and then add the small cube's of Carrots. Cook on for 20 minutes.

* Step 3

Add Leeks and Potatoes and then gently simmer with a lid on (could be done in a saucepan on the hob) for 30 minutes. Drain the 400g tin of Cannellini beans into a fine mesh sieve and then rinse the tin water off of the beans under the cold water tap and then add the beans too the cooked hot soup - if using Swede will need too dice into very small chunks and be cooked at the beginning of the cooking of the carrots stage.
