Slow cooker lamb
I'll be short on time later so dinner needs cooking now. A pot roast of breast of lamb and vegetables to fill my boys on a grey autumn day. #mycookbook #slowcook

Cooking instructions
* Step 1
In a frying pan cook the onion leek and mushrooms until softened and just taking on colour. Add these to the slowcooker.
* Step 2
Then in the same pan seer the outside of the lamb to brown on all sides. Add the part cooked lamb to the slow cooker.
* Step 3
Add the thyme, chopped carrots and chopped potatoes around the meat. Pour in the stock.
* Step 4
Cook for about 5 hours so the meat becomes meltingly tender.
