Broccoli and Stilton soup

Broccoli and Stilton soup

When the children are away I cook this for myself for a mood boost. Add a little beetroot before blending to change this recipe up for a Halloween dinner. #mycookbook

Cooking instructions

* Step 1

Chop or dice the Broccoli onion and celery and add them to pan with the fat. Fry off until softened.

* Step 2

Make up the chicken stock with the cubes and hot water. Pour this over the vegetables and bring to a boil. Simmer for approx 15 mins.

* Step 3

Blend until smooth and add the milk. Bring back to the boil. Add the nutmeg. Then switch off the heat and stir in the cheese crumbs until melted into the mixture.

* Step 4

Serve with a swirl of double cream. I recommend having this with crusty bread for dipping.
