Whole roasted cauliflower with her bodyguards
Don’t be scared that there is nothing in heaven here other than a piece of cauliflower. It is no coincidence that this will be the main character in this recipe. I want to show that there is only one such modest vegetable that can conjure a true hedonistic feast. It's not really a real recipe, it's more of a cooking technology, more of a cooking idea, but for me it's one of my favorite cooking methods and my experience is that once you try it, there's no going back. It's one of the finest things in the world.

Cooking instructions
* Step 1
Remove the cauliflower’s outer leaves and core, keeping the cauli-head in one piece.
* Step 2
Find a pot for the cauliflower with adequate size for boiling. Bring water to the boil, adding plenty of salt and about 30g butter.
* Step 3
Place the cauliflower into the boiling water. Precook the cauliflower for about 15 minutes, or till a knife can be stick into easily. In the meantime preheat the oven it’s hottest temperature 230-250C°
* Step 4
Transfer the precooked cauliflower onto baking tray linen with baking sheet. Brush with 3-4 tbsp of olive oil.
* Step 5
Bake the head for 35 minutes. this is of course worth experiencing, the exact baking time depends on the oven. It is good when it is evenly baked and has a darker or more caramelized spots on it.
* Step 6
Serve in room temperature with lemon-turmeric yogurt, citrus-chilli salsa, caramelised mixed vegetables and pomegranates.
