Gnocchi with vegan cheese & mixed nuts

Cooking instructions
* Step 1
Grate the vegan cheese, and roughly chop those mixed nuts. Then give a roughly chop also to the mixed leaf salads.
* Step 2
In large pot boil some water for the gnocchi. As soon the water boils, add 2tbsp salt and the gnocchi itself. Cook it 2 minutes less than the package indicating.
* Step 3
In the meantime, in larger frying pan roast the chopped mixed nuts till golden brown. With a clove of garlic sticked onto a fork, give a few stir to the nuts. When you can smell the nuts & garlic, add a ladle of the gnocchi cooking sauce, this is the base of the sauce.
* Step 4
As soon as the gnocchi is cooked, ladle all into the sauce base and adding the grated cheese, the mixed leaf salad, the mozzarella and finally the cold vegan butter.
* Step 5
Turn the heat off, stirring constantly, the heat of the pan will melt the butter and cheese till gets a creamy texture. (If it gets too thick, add some more of the gnocchi cooking stock till it is to our taste)
* Step 6
Serve it hot! Spoon on to a plate topping some mixed leaves, grated cheese and finish with a couple of spoons of basil oil
