Swedish Meatballs

Ingredient

ground chuck

3/4 pound

ground pork

1/4 tsp.

nutmeg

1/4 tsp.

allspice

3 cups

beef broth

1/4 cup

heavy cream

Cooking instructions

* Step 1

Preheat oven to 350°F.

* Step 2

Mix torn bread and milk in a large bowl until bread pieces are soaked.

* Step 3

In a sauté pan, combine yellow onion, butter, and salt. Cook until translucent. Add onions to the large bowl along with remaining meatball ingredients (saving the pan for later). Use a cake mixer to beat together ingredients until thoroughly combined, about 2 minutes.

* Step 4

Using a spoon, measure out about 1-ounce portions of meat mixture onto a foil-lined sheet pan. Roll each portion into a ball. Place in the oven for 30 minutes.

* Step 5

Place butter in the same sauté pan from earlier and add cooked meatballs. Turn the already browned meatballs until crispy (this is done to continue forming a fond in the pan). Remove meatballs and set aside.

* Step 6

Add flour and combine with residual butter to form a roux. Whisk in broth and cream and continue stirring until it’s brought to a simmer. Reduce heat and continue whisking until thickened. Add meatballs back to the gravy.

* Step 7

Serve over egg noodles or mashed potatoes (see recipe) and enjoy!
