Ham Florentine

This is another of my DIET recipes that I have marked as “Six2go”. These recipes use 6 ingredients that I usually have to hand and take no more than 15 minutes to prepare and cook – i.e. less time than time than it takes to get a diet busting takeaway meal. In addition to the 6 ingredients I am allowed to use salt, pepper and “Spray2Cook” (a word I use to describe any low-cal. non-stick cook’s oil spray). Cooking instructions

* Step 1

Heat a broiler / grill to medium to high heat.

* Step 2

Microwave the spinach for 1½ minutes to wilt / defrost.

* Step 3

Heat a pan on a high heat sprayed with Spray2Cook, add the egg and scramble for 1½ minutes to thicken.

* Step 4

Line a small shallow ovenproof dish with the ham, slightly overlapping the edges rather than falling short.

* Step 5

Strain the spinach and spread over the ham in the base of the dish and season with salt and pepper.

* Step 6

Pour the thickened eggs over the spinach, with a teaspoon scatter the fat crème fraîche over the eggs.

* Step 7

Sprinkle a layer of cheese over the eggs crème fraîche. Put the dish under the broiler / grill for 10 minutes until the cheese melts and browns.

* Step 8

Toast the cut side of the roll on the broiler / grill for the last 3 minutes.

* Step 9

To serve place the dish on a plate with the roll.
