Peanut butter chickenpea Curry with Roasted Broccoli and basmatic rice

Cooking instructions

* Step 1

Cook rice

* Step 2

Roast broccoli

* Step 3

Halve and thinly slice onion. Peel and grate garlic.zest lime and roughly chopped coriander. Rinse chickpeas

* Step 4

Heat oil on medium high heat. Add onion. Once soften ass garlic and North Indian style curry powder (measure with heart and how much spice you can handle) cook for one minute and add chickpeas

* Step 5

Add chopped tomatoes and coconut milk. Add stock paste. Bring to boil and the lower to simmer. Once thicken add peanut butter. Then add broccoli (add water if it becomes to thick).

* Step 6

Once nearly ready to serve stir the lime and half the coriander into the rice. Then serve. Sprinkle remaining coriander and seve the lime wedges to side and squeeze on top
