tomato puree

1-2 tsp

dried thyme

1-1.5 kg

oat milk

Cooking instructions

* Step 1

Peel and chop potatoes to small pieces. Put them into large pot and cook in salted water until soft. Pour out the water and mash them. Add splash of milk (we used oat) and vegan butter. Add salt and pepper to taste and mix well. We also added some vegan cream cheese to add creaminess and flavor, but it's optional.

Peel onion and garlic and chop onion into small pieces. Heat olive oil and add chopped onion. Cook until golden. Add pressed garlic, tomato puree, salt, pepper and thyme. Stir well and cook for another 2-3 min.

Add broth and lentils. Simmer on low heat for 15 minutes, covered. Add frozen vegetables and cook for another 10 minutes, uncovered (most of the liquid should be absorbed/evaporated and veggies and lentils should be soft).

* Step 4

Pour lentil mix into baking dish. Layer mashed potatoes on top. Bake in oven for 20-25 minutes at 180°C.
