Hawaiian Delight adapted from Good Housekeeping's book of Menus, Recipes and Household Discoveries-1922
Light and fluffy texture. Glad I added some rum extract to the batter. Pretty good!
Cooking instructions
* Step 1
Sift together the pastry flour, baking powder, salt, sugar and ginger.
* Step 2
Beat the egg until light, and to it add the milk and melted shortening/butter.
* Step 3
Gradually add the dry ingredients, stirring all the while.
* Step 4
Add the pineapple extract
* Step 5
Beat well, spread in a greased cake pan, and sprinkle the top with a mixture of one rainfall of the sugar and the cinnamon.
* Step 6
Bake at 400° for twenty minutes.
* Step 7
Cut in squares and serve hot with the grated pineapple over it.
