Broccoli stir fry & tomato rice πŸ₯¦πŸ…πŸš

#goldenapron23#week2, Broccoli is one vegetable which is rarely used in indian cuisine, but broccoli stir fry is one of the delicious and mild flavored with spices, garlic and chillies it goes well with almost any thing, rice, indian flatbread or as side dish. Tomato rice is easy , quick, delicious and taste great with broccoli stir fry but if you desired you can serve with other dishes too. Course : lunch, dinner, Cuisine: indian, Diet: vegetarian.

Cooking instructions

* Step 1

Wash and clean broccoli florets πŸ₯¦, keep aside.

* Step 2

Heat 2 tbsp, add potatoes cubes πŸ₯” fry them till golden, remove and keep aside. Add 3 tbsp oil, add cumin seeds when start to crackle,add finely chopped garlic πŸ§„ cook till golden, add broccoli florets πŸ₯¦, stir fry for 1 min, add kashmiri red chillies powder 🌢️, coriander cumin powder, sugar and mix well.

* Step 3

Add salt πŸ§‚ mix well, remove from heat, let it cool down completely, then add ringed onions πŸ§…, finely chopped green chillies, fried potatoes πŸ₯” and lemon juice πŸ‹ mix gently and serve with tomato rice πŸ…πŸš, garnish with toasted white sesame seeds, some few tomato cubes πŸ….

* Step 4

Wash basmati rice 🍚 for 3 times, soak for 15 mins. Boil 2 cups of water, add 1/2 tsp salt πŸ§‚, add soaked rice, let it boil, when 70% done, remove the rice 🍚 from the heat, let it cool completely/ lay them on a baking tray, spread the rice with folk, let it cool completely.

* Step 5

In a small frying pan add ghee, fry cashew nuts/ almonds till golden, remove and keep aside.

* Step 6

Heat oil and add bay leaf πŸ‚, cumin seeds, cinnamon stick, green cardamoms, cloves when starts to crackle, add finely chopped onions πŸ§…, cook till golden, add ginger garlic paste πŸ§„, cook for 1 min, add finely chopped tomatoes πŸ…, cook till tomatoes are soft and oil comes out.

* Step 7

Add spices ( paprika powder 🌢️/ kashmiri red chillies powder 🌢️, curry powder/ garam masala powder, 1 tbsp finely chopped coriander leaves 🌿 and mix well. Cook for 2 mins and finally add cooled boiled 🍚 rice, mix gently, cover and cook for 5-10 mins, check if rice is tender. Garnish with finely chopped coriander leaves 🌿, few tomato cubesπŸ…, serve hot with broccoli stir fry and enjoy
