#cookeverypart, A spicy and flavored Bengali egg curry that is popular in Bengal and Bengalis, it is made with hard boiled eggs, the eggs first marinated, later fried and then cooked in onion- tomato gravy with spices. Course: lunch, dinner, main course, Cuisine: Bengali ( indian), Diet: vegetarian, nutrients value: vitamin A,D,E,K,B1,B2, iron.

Cooking instructions

* Step 1

In a pot of water πŸ’¦ to boil and once water as started to boil, add salt πŸ§‚ mix well, add eggs carefully into the water πŸ’¦ with a skimmer so that the eggs don't crack, turn the flame high allow to boil for 10 mins. Meanwhile in a bowl πŸ₯£, add cold water, drain the eggs, immediately place them in cold water πŸ’¦, Let it cool completely.

* Step 2

Peel and make slightly cuts on the outer body of the eggs πŸ₯š, make sure the cuts are not too deep, sprinkle turmeric powder, black pepper powder, salt πŸ§‚, coriander cumin powder and rub them evenly on each eggsπŸ₯š, keep aside. * Step 3

In a pan add 4 tbsp mustard oil, heat oil for 5 mins, add marinate potatoes πŸ₯” chunks and fry them till golden brown and crisp. In remaining oil add marinate eggs πŸ₯š and fry them till golden brown, fry for 4 mins, strain the eggs πŸ₯š and keep aside.

* Step 4

In same pan, add mustard oil if it's reduced, heat the oil, add whole spices: bay leaf πŸ‚, whole dry red chillies 🌢️, cloves, cinnamon sticks, cardamoms & cumin seeds, let them crackle, add finely chopped onions πŸ§…, add sugar into the pan and caramelized the onions πŸ§…, cook till pink in colour, add ginger garlic paste πŸ§„ and mix well, cook for 1 min.

* Step 5

Add finely chopped tomatoes πŸ…, green chillies paste and mix well, add salt πŸ§‚ mix well, cook till tomatoes are soft, add kashmiri chillies powder 🌢️, coriander cumin powder, turmeric powder and mix well, cook for 2 mins, add water πŸ’¦, Bengali garam masala powder/ garam masala powder, ghee if desired and mix well, boil the gravy on high flame for 15 mins.

* Step 6

Add fried eggsπŸ₯š stir gently, cook for 10 mins, add slit green chillies and cook for a min, then add fried potatoes chunks πŸ₯” and mix well, Serve with plain rice, jeera rice 🍚, naan, garnish with finely chopped coriander leaves 🌿.
