A famous curry recipe from the island of Zanzibar, it quick to make and delicious in taste, this curry is flavor and made with coconut milk only. Course: main course, lunch, dinner, Cuisine: Tanzanian, Diet: vegetarian, gluten free, vegan, nutrients value: vitamin B12, C & E.

Cooking instructions

* Step 1

Heat sunflower oil 🌻, add finely red chopped onions πŸ§…, crushed garlic πŸ§„,red bell pepper, jalapeno pepper, cook till soft, but not brown, add mixed vegetables (cauliflower, πŸ₯• carrot, french beans) and tofu, cook for 5-6 mins, stirring often.

* Step 2

Add chopped tomato πŸ…, cook for 6 mins on low medium heat, add coconut milk πŸ₯₯πŸ₯›, mix well, add salt πŸ§‚, crushed chicken cube, paprika powder 🌢️ and garam masala powder mix well, let it boil for 9 mins.

* Step 3

Note: don't over cook the vegetables, keep them crunchy, but still have a bite. You can add more coconut milk πŸ₯₯ πŸ₯› if you like.

* Step 4

Garnish with finely chopped coriander leaves 🌿, serve with ugali, steamed rice 🍚 and Enjoy.
