Fried okra masala πŸ…πŸ§…πŸ§„πŸŒΆοΈ

A fresh okra made with gram flour and rice flour batter, later added in tomato - yogurt sauce, a quick, tasty, delicious ' sabzi ' from Punjab. Course: side dish ,Cuisine: North India, Diet: vegetarian, nutrients value: vitamin A,B1,B2,B3,B5,B9,& B12,C,K, zinc, iron, copper, phosphorus, calcium, potassium, antioxidants.

Cooking instructions

* Step 1

Wash okras and pat dry them on kitchen towel and keep aside, in a bowl πŸ₯£, add gram flour, rice flour, salt πŸ§‚, paprika powder 🌢️, turmeric powder, dry fenugreek leaves 🌱, cumin seeds, asafetida, sesame seeds, garam masala powder & finely chopped coriander leaves 🌿, water πŸ’¦ mix well, make semi thick batter, keep aside.

* Step 2

Heat oil in a frying pan, dip one okra at time in the batter and drop in the oil, cook till golden brown, complete all okras the same way, remove on to kitchen napkin, keep aside. Heat oil, add cumin seeds when start to crackle, add finely chopped onions πŸ§…, cook till pink in colour, add ginger garlic paste πŸ§„, saute for 1 min.

* Step 3

Add finely chopped tomatoes πŸ…, green chillies paste, salt πŸ§‚ and mix well, cook till tomatoes πŸ… are soft, add paprika powder 🌢️, coriander cumin powder, turmeric powder and mix well, cook on low medium heat or until oil comes out, add whisk yogurt, mix well. Cook for 1 min, then add 4 tbsp water mix well.

* Step 4

When start to boil, make a semi thick gravy, arrange fried okras in the serving dish and pour hot sauce on top. Garnish with finely chopped coriander leaves, chopped green chillies, ginger juliennes.
