Lemon Fluffy with Lemoncello Cream ๐Ÿ˜„๐Ÿ˜

A light family pudding that separates into 2 quite distinct layers when it cooks, it has a lively fluffy top and a creamy lemon base, provided it's not overcooked

Cooking instructions

* Step 1

Preheat the oven to 180 Celcius/160 Celcius fan

* Step 2

Cream the butter until really soft, then add the caster sugar and beat well. Whisk in the egg yolks one by one, then stir Inn the flour.

* Step 3

Grate the rind if the 2 lemons, cut in half and with the back spoon squeeze and strains the juice and add the rind & the juice, then add the milk.

* Step 4

Whisk the egg whites in the bowl until stiff and fold gently into the lemon mixture. Pour into a 1.2 litre pie dish, place inn a bain-marie and bake for 30-40 minutes.Sprinkle with Icing sugar.

* Step 5

Serve immediately alongside the softly whipped cream flavoured to taste with limoncello or some creme fraiche.
