Blueberry Crumble Muffins, 3 net carbs per muffin
Ahoy friends! Had to get a culinary grip on things so I took a break. In 8 months this old girl lost 83 lbs, was taken off blood pressure meds AAAAND I was taken off insulin. Go me! Here’s how I managed to keep on eating happy. These fiber bombs are very tasty and very filling and only 3 net carbs per muffin. I’ve made a ton of flops but using carbquick really opens up your options. I’ve added pictures of some of the products I’ve been using. Girls gotta eat!

Cooking instructions
* Step 1
Preheat oven to 350. In a bowl, mix the muffin ingredients except the water and berries. If you need the water to loosen it up, use it. Fold in berries.
* Step 2
Spray a muffin tin or use paper liners. I used a 1/3 cup measure, sprayed, to dip my batter out. It made 12 muffins.
* Step 3
In a small bowl, combine the crumb ingredients with a fork until crumbly. Using a tablespoon, I put a pile of crumbs on each muffin.
* Step 4
Bake until Golden brown and the tops bounce back. About 20-30 minutes.
