Udon in Soup

Udon noodles are most commonly served in hot soup with toppings such as Tempura, Kakiage Tempura or ‘Abura-age’ cooked just like ‘Inari-zushi’ wrappers. My home town is close to Kagawa prefecture that is famous for ‘Sanuki Udon’ and I grew up with the delicious noodles. Imported Frozen ‘Sanuki Udon’ are available from most Asian grocers and I strongly recommend you to try them.

Ingredient

Food ration :

2 Servings
2 tablespoons

Sake (Rice Wine)

1/2 teaspoon

Salt

1/2 tablespoon

Mirin

Cooking instructions

* Step 1

Place Dashi Stock, Salt, Soy Sauce, Mirin into a saucepan and bring to the boil. *Note: ’Usukuchi’ lighter colour Soy Sauce, that is saltier, is ideal. If you use the ordinary Soy Sauce, you might need extra Salt.

* Step 2

Cook Udon Noodles as instructed. DO NOT add salt into the water. The best Udon Noodles are the frozen type that you can find at Asian grocery stores. The frozen Udon Noodles are already cooked, so just warm them in the boiling water.

* Step 3

Noodles are served in hot soup with toppings such as Tempura, Kakiage Tempura or ‘Abura-age’ cooked just like ‘Inari-zushi’ wrappers, Spring Onion, Wakame, Surimi (paste made from fish) products. *Please find my recipes for those.
