Mashed swede
My youngest daughter spotted this tip - had to share. It’s fab! This method retains all of the flavour and much of the nutritional value of this underrated vegetable. #christmasgift
Cooking instructions
* Step 1
Put swede in a microwaveable bowl with a splash of water. Cover and cook on high for approx 20 to 30 mins depending on the size of the swede.
* Step 2
Leave to cool slightly. Peel with a teaspoon and chop into pieces or cut off the top and scoop out. The swede on the board is the cooked one.
* Step 3
Mash with salt, pepper and a grating of nutmeg. Add butter or butter alternative if liked.
