Kale and Vegetable Green Soup 🥬💚🌱
#seasonalcooking #cookeverypart I’ve got a thing about soup! It’s so wholesome and it makes me feel good making it and eating it! This is such a good soup, more like a potage, the green split peas and potatoes give a thick broth and it’s perfect with a wedge of good bread and vegan butter. #soup #happyfood

Cooking instructions
* Step 1
Finely chop the onion, celery and one of the carrots and sweat in a little oil for 10 minutes. See tip to save time.
* Step 2
Wash and add the green split peas and add the broth. Mine needed to cook for 25 minutes. Skim foam from the top.
* Step 3
Add potatoes to the pot around 15 minutes before the end of cooking. Add carrots about 10 minutes and green veg 5 minutes from the end. You want the veg soft and the potatoes break down a little to thicken the soup. Serve in bowls.
