Vegetable Tumbet 🌱 Veggie Mallorca Stew

Inspired by many a trip to beautiful Pollensa in Mallorca and the Hairy Bikers road trip, this is my take on β€˜Vegan Tumbet’ - seasonal Mediterranean veggies with garlic topped with crispy potatoes 🌿

Ingredient

Cooking time :

35 minutes
1 sprig

thyme

1 sprig

oregano

1 sprig

Rosemary

1 pinch

sea salt

Cooking instructions

* Step 1

Slice the veg into thin slices. Brush with olive oil and fry gently in batches.

* Step 2

Cook the garlic in a little olive oil until translucent. Add the thyme and oregano and a few grated tomatoes.

* Step 3

Layer in a baking tray with a layer of the veggies and a layer of the tomato sauce with the potatoes on top. Drizzle with olive oil and a sprinkle of sea salt and bake in a hot oven until the potatoes are crispy.
