Quick red onion pickle
These are very quick and easy and it adds a touch of sour and colour to poke bowls, nachos and kebabs (all recipes to follow soon, feel free to follow if you would like to see them!)
Cooking instructions
* Step 1
Put the spices in a bowl and cover with the vinegar. I used Japanese vinegar but I sometimes use apple cider or Chinese. There’s a slight difference in flavour but it’s to your preference.
* Step 2
Cut the onions into circles. As finely as possible, mine were a little thick this time - I will add another photo next time as they usually look better. Add the onions to the marinade and they will be ready to use in a couple of hours. An optional addition is to add a little boiled water to a little sugar and add to the mixture. This will make a slightly softer and sweeter pickle. I try to avoid sugar so I only add a little (if at all) but add to your taste.
