Buttermilk roast chicken ๐Ÿ—

Inspired by Samin Nosratโ€™s recipe this was the most tender roast chicken Iโ€™ve made.

Cooking instructions

* Step 1

The night before cooking place the whole chicken with the buttermilk and salt in a ziplock bag. Leave in the fridge to marinate.

* Step 2

1hr before cooking take the chicken out the fridge to reach room temperature.

* Step 3

Season the chicken and roast in the oven at 180c for 1 hr. Tip: put the legs at the back of the oven so they cook through.

* Step 4

Take out the oven and leave to rest for 15mins covered in foil. Carve and serve.
